I arrived a little late to the Stranger Things party. I knew I couldn’t multi-task while I watched, and I know myself well enough to know I don’t have the self control to watch it an episode at a time. Finally in December, I had a completely free Saturday. I started it immediately when I woke up, and eight hours later was relieved to be rid of the FOMO I had been experiencing for the five months that I hadn’t watched it.
There aren’t a ton of food moments in the show that aren't pre-packaged or semi-homemade. Eleven’s Eggo obsession was intriguing and endearing, so in the absence of a waffle iron, I decided to go semi-homemade myself and turn America’s favorite freezer waffles into the foundation of different kid food, five ways.
Unfortunately, I was making all these at once, so I kind of dropped the ball on photographing them individually.
PS I used this fun tray from Fishs Eddy to take the kids theme and really run with it.
eggos five ways
inspired by Stranger Things...pretty much every episode
I made four of each for three people and there were leftovers. Recipes are posted to make one type only.

- 1 box cinnamon sugar eggo minis
- peanut butter
- desired jelly flavor
- optional apple or banana slices (I didn't use these)
Toast the waffles (as many as you want). Spread peanut butter on half of the waffles. Spread jelly on the other half of the waffles. Place fruit in the middle if desired. Put jelly waffles on top of the peanut butter waffles to make sandwiches. Cut along the lines to make mini sandwiches and serve.

banana nutella
- 1 box traditional or cinnamon sugar eggo minis. (I used cinnamon sugar.)
- one banana
- 1 jar of Nutella
Toast or microwave waffles. Spread waffles with Nutella. Place bananas on half. Place other half on top of the banana-ed halves to make into sandwiches. Cut along the lines to make into mini sandwiches and serve.

chicken and waffle
5 traditional eggo minis, cut into individual waffles to make 20
- fried chicken nuggets (I got mine from Sticky's Finger Joint, but bonus points for homemade!)
- 1 cup maple syrup
- 1/4 cup hot pepper jelly or more if desired
- scallions for topping
- optional butter
- optional shredded cheddar cheese
- toothpicks to secure
Toast waffles. Lightly butter if desired. Place chicken pieces on top of the waffles, use toothpick to secure.
To make the hot pepper syrup, combine maple syrup with pepper jelly to taste. Drizzle over chicken-topped waffles. Sprinkle scallions on top. Add some cheese if you want to really do it up.

- 1 box traditional or cinnamon sugar eggo minis (I used cinnamon sugar)
- 1 stick of butter per 24 waffles
- 1 cup graham cracker crumbs per 24 waffles
- 1/2 cup sugar per 24 waffles
- 12 large white marshmallows per 24 waffles, cut in half
- 24 hershey kisses or 1 bag Hershey's milk chocolate chips (I used the latter)
Heat oven to 400ºF. Line a baking sheet with parchment paper and let waffles sit at room temperature for 10 minutes. Melt butter in a shallow bowl. Mix graham cracker crumbs and sugar in another shallow bowl. My grocery store didn't have the crumbs, so I made them by crushing graham crackers in a plastic bag. Separate the waffles into minis. Dip each mini waffle in the butter, then into the sugar mixture to coat. Place on prepared baking sheet. Once all the waffles are prepped. Bake 8-10 minutes.
Remove from oven and change to broil. Place a marshmallow, cut side down, on each waffle. Return pan to oven for one minute. Remove from oven and place kiss or chocolate chips on top immediately, pressing them into the softened marshmallows to stick if needed. Serve warm.

grilled cheese
- one box traditional eggo minis
- american or cheddar cheese
- butter
Lightly toast waffle. Heat butter in a skillet over medium heat. Place one waffle in skillet and put cheese on top. Once cheese starts to melt and the waffle starts to brown, place another waffle on top and flip. Continue to flip until cheese is melted and both sides are browned. Serve.
